Spicy Cheez-It Chicken

This delicious Spicy Cheez-It Chicken recipe has been adapted from the following recipe:



4 Chicken Breasts

1.5 Tbsp Hatch Spice Blend

1.5 Cups Cheez-It Crackers

2 Tbsp Butter, melted



2 Tbsp Butter

2 Tbsp Flour

1 Cup Heavy Whipping Cream

½ Jar Red/Green Blend Chile

1 Cup Monterey Jack Cheese



Heat oven to 375 degrees and grease an 8x8 glass cooking dish. Add Cheez-Its and Hatch Spice Blend to a plastic bag and crush them using a rolling pin or flat side of a tenderizer.


Pat the chicken breasts dry with a paper towel. Melt the butter and dip each chicken breast in the butter and place in the cooking dish. Then pour half of the Cheez-It/Hatch Spice Blend mix over the chicken and press it into the chicken with your hand. Flip them over and cover chicken with remaining mix. Cook for 25 minutes (or more depending on how thick your chicken breasts are) – until chicken is 165 degrees internal temperature.


When the chicken is almost done baking, in a small sauce pan, melt the 2 tbsp of butter. When melted, add in the flour and whisk them to combine. Add in the heavy whipping cream and stir constantly over medium heat until it thickens. Then add in the Red/Green Blend Chile.


Once the chicken is done baking, pull them out of the oven and pour the creamy chile sauce over the chicken breasts. Last step, pile the cheese evenly on top of each chicken and put under the broiler for a few minutes until bubbly. Enjoy!
