Red Enchiladas

Red Enchiladas

Ingredients:

8 Corn Tortillas

4 to 8 Eggs

1 pound of hamburger

1 jar of The Fresh Chile Co. Red Sauce

1 pound of grated cheddar cheese

1/2 pound of grated asadero or muenster cheese

1 yellow onion, diced

Directions:

Brown onions in skillet with 3/4 diced onions.

Brown the hamburger and drain.

Heat tortillas.

Heat one jar of Fresh Red Chile Sauce or Abuela's Traditional Red Chile Sauce in a sauce pan with 1/2 cup of water (If desired to think it some).

Apply small amount of sauce on 4 plates.

Add one tortilla and cover with hamburger.

Add more sauce and cover with grated cheddar cheese.

On the second layer, add more sauce, asadero or muenster cheese and dusting of diced onions.

Broil in oven until cheese is caramelized and slightly brown.

Fry eggs over easy.

Remove enchiladas from oven and put egg(s) on top and serve.

Hello Pat,
I am going to edit the recipe, but you should put half the jar of Abuela’s Traditional with the half cup of water into a separate sauce pan, all this does it change the texture of the sauce for the enchiladas! Let us know what you think if you try it out!

When making this recipe you can cook the hamburger meat any way that you prefer. We just used a sauté pan to brown ours, but the choice is yours! Let us know what you think if you try out the recipe!

I’ve made the Chile Colorado with Abuelas red sauce and made salsa with the mixed red and green both were terrific and I had to order more of your sauces. They are fantastic!!
