Red Enchiladas

Red Enchiladas

Ingredients:
8 Corn Tortillas
4 to 8 Eggs
1 pound of hamburger
1 jar of Fresh Red Chile or Sun-Dried Chile
1 pound of grated cheddar cheese
1/2 pound of grated asadero or muenster cheese
1 yellow onion, diced

Directions:

Brown onions in skillet with 3/4 diced onions.
Brown the hamburger and drain.
Heat tortillas.
Heat one jar of Fresh Red Chile or Sun-Dried Chile in a saucepan with 1/2 cup of water (If desired to think it some).
Apply a small amount of sauce on 4 plates.
Add one tortilla and cover with hamburger.
Add more sauce and cover with grated cheddar cheese.
On the second layer, add more sauce, asadero, or muenster cheese, and a dusting of diced onions.
Broil in the oven until cheese is caramelized and slightly brown.
Fry eggs over easy.
Remove enchiladas from the oven and put the egg(s) on top and serve.

Only because I don’t have any plates that I wished to put under a broiler :-) I turned this into a Casserole. We used 18 Corn Tortillas, three layers with the meat, sauce & cheese, using some cheddar in the internal mix. We used 2 parts Mild red, and 1 part Medium was spicy enough for us. Covered the baker with foil, and baked 400 for 30 mins, then foil off & broiled lightly to toast the Asadero cheese. Once for meat we used leftover shredded, smoked pork shoulder. LOVE this, such great Red Chile flavor!!!

Hello Pat,
I am going to edit the recipe, but you should put half the jar of Abuela’s Traditional with the half cup of water into a separate sauce pan, all this does it change the texture of the sauce for the enchiladas! Let us know what you think if you try it out!

Hello Mike!
When making this recipe you can cook the hamburger meat any way that you prefer. We just used a sauté pan to brown ours, but the choice is yours! Let us know what you think if you try out the recipe!
