Hatch Chile Relleno Enchiladas ... The Randy Special
Ingredients:
1-2 Hatch Chile Rellenos (You can buy them pre-made HERE, or you can make your own by following THIS LINK and purchasing our frozen chile from our website HERE)
1 pkg of Hatch Green Chile Corn Tortillas
1-2 jars of FCC Sun-Dried Chile (any heat you fancy)
Shredded Cheese (any kind you want)
Instructions:

Ready your Relleno (from the options above) pour 1-2 jars of Sun-Dried Chile into a saucepan, and warm on low heat.
On a plate, place some warmed-up Sun-Dried Chile on the bottom and top with 1-2 Hatch Green Chile Corn Tortillas.
Place your Relleno onto the tortilla and top with cheese.
Add some more sauce on top and then again some more cheese.
If desired, place under a broiler to melt the cheese, and enjoy this wonderful creation by Randy!!
