1) Mix all ingredients together (except Red Chile Sauce) thoroughly and form into meatballs.
2) Once meatballs are formed place in the bottom of a lightly oiled medium Dutch Oven {or Stew Pot with heavy lid}.
3) With the fire on low brown the meatballs on all sides turning them very carefully, so they hold their shape.
4) Pour 1 Jar Mild FRESH RED CHILE SAUCE over meatballs and add either 1 jar of water or beef broth. Cover and increase heat slightly.
5) After about 15-20 minutes (don’t let it boil, only simmer) remove the lid and add 1 cubed avocado and a doz. sprigs of cilantro. Serve Warm with Chips and slice of lime.
