Fresh Chile Queso

1 lb ground beef or elk or hot sausage
2 lb Velveeta cubed
1 chopped onion
2 garlic cloves
1 stick of butter
1 jar of Your choice of FCC Pure Green Chile, Red & Green Blend, Red Chile Roast, or our Jalapeño Roast
Tablespoon oregano
2 tsp ground cumin
2 tsp FCC Hatch Red Chile Powder
1 tsp salt and pepper

Cook the meat with chopped onion, garlic, cumin, oregano, salt and pepper, and chile powder until the meat is brown and caramelizes.
Drain any fat from the meat and add one jar of your choice of Fresh Chile Company product, I’m going to use the roasted jalapeño for the color and the heat, but you can use any of our Fresh Chile products, salsas, green chile, or red and green blend.
Add the cubed Velveeta cheese and 1/2 a cup of milk or cream to the cooked meat.
Warm it on low, stirring it often until it is the consistency of chili con queso; enjoy!!
