4 cups water
1 TBSP. Vinegar
1 TBSP. Fresh Red Chile Sauce (heat level of your choice)
2-4 Eggs
Salt and Pepper
Add water to a 10 inch skillet; add vinegar. Bring to a boil and reduce to a simmer
add Fresh Chile Sauce.
Break an egg into a small cup and slide it into the simmering Chile water. Repeat with each egg allowing equal spacing in the pan.
Simmer eggs , uncovered, 3-5 minutes or until whites are completely set and yolks begin to thicken. Do not overcook. It is ok to carefully turn eggs if desired.
Remove eggs with a slotted spoon and season to taste with Salt and Pepper.
