There are many ways to make Elote Corn but this recipe uses a topping mixture that we just LOVE! Hope you enjoy it too.
6 – 8 Ears of Corn (with husks)
¼ Cup Sour Cream
¼ Cup Mayonnaise
1 Tsp Hatch Spice Blend
¼ Cup Cotija Cheese
Juice from one Lime
1 (or 2 if you love Garlic) Cloves, pressed
3/4 Cup Cilantro
1 tbsp Butter
Mix together the Sour Cream, Mayo, Hatch Spice Blend, Cotija, Lime juice, Garlic, and Cilantro in a medium-sized bowl. Once combined put it in the refrigerator to chill.
Heat grill to medium-high heat.
Pull the corn husks back (without removing them) and tie them back.
Then use a stick of butter to coat the ears of corn in butter (will use about 1 tbsp worth).
Place carefully on the grill in a way that the husks are not ON the grill (they will catch on fire!) or if you prefer, you can completely take the husks off to be extra safe.
Grill the corn until charred, turning every 2-3 minutes.
Pull the mixture from the fridge and use a kitchen brush to brush the mixture onto the corn.
Can then add additional cotija, cilantro and Hatch Spice Blend as desired to serve.
