Grilled Eggplant with Fresh Red

2 Large Eggplants
8oz Sharp White Cheddar Cheese
1/4 C Fresh Red Chile Sauce
1Tbsp Olive Oil

Cut off the ends of the Eggplant. Slice washed eggplants crossways about 1/2in thick. Rub olive oil on both sides of the Eggplant slices. Grill Eggplant (can use an outside grill, or grill on the stovetop in a pan) until tender. Remove and add to serving plate spread out. Top with desired amount of Sharp White Cheddar Cheese and let it melt over the freshly grilled Eggplants. Once melted, smother with spoonfulls of Fresh Red Chile Sauce until you’ve reached desired amount.
