Carol's Taco Soup

Carol's Taco Soup
1 white onion, diced
2 large potatoes (any kind will suffice)
2 celery stalks, diced
1Lb of ground beef (you can substitute for chicken, turkey, venison, or any other meat you prefer)
1 jar of Red & Green Blend or Pure Green Chile (Your choice)
2 cans of diced tomatoes
1tsp of ground cumin
1/2 tsp of lime pepper
1/2 tsp garlic

In a large pot, brown your meat of choice.
Once the meat is browned, add in your onion, celery, jar of Chile, and let that sit and simmer for a couple of minutes.
Next, add your cans of tomatoes, also add 1 tomato can worth of water, your spices, and garlic, then let simmer for a couple more minutes.
Finally, add the potatoes, stir, cover, and let sit until the potatoes are cooked. Serve topped with cheese and a quesadilla (optional), enjoy!!
