2 large zucchini, quartered lengthways and sliced in 1/2” slices
4 tomatoes on the vine diced
1 large onion, diced
1 jalapeño, seeds and veins removed
7 slices bacon cooked and chopped
Sauté onion and zucchini in a little bacon grease until desired doneness is achieved. Add jalapeños about halfway through cooking the onion mixture. Add tomatoes, bacon and seasoning. Toss and heat until everything is thoroughly heated.
