Mexican Style Lasagna
Layering directions and recipe:
-Meat mixture- (leftover smoked pulled pork sprinkled with Hatch Spice Blend and mixed with cheddar cheese)
-Corn Tortillas
-Chunky Refried Beans
-Corn Tortillas
-Meat Mixture
-Corn Tortillas
-White Sauce-
I was out of sour cream and cream cheese and snowed in, so I melted 10oz of goat cheese with half a can of cream of mushroom soup and half a cup of Pure Green Chile
Bake at 350° for 30 minutes, then broil until browned (about 5-6 minutes)
Finally, top it off with shredded cheddar jack cheese!
It turned out fantastic!!!
