Spicy Tuna Waffle Cakes
5 oz can tuna in water drained very well (put in a fine strainer and press with the back of a spoon. Stir around and keep pressing until water is depleted).
3 sizeable plain pork rinds crushed
1/4 tsp FCC Hatch Green Chile Powder
1 tsp FCC Pure Green Chile (XHot)
1/4 tsp garlic powder
1/4 tsp onion powder
1/4 tsp kosher salt
1/4 tsp black pepper
1/2 tsp dill weed
1 tsp lemon juice
1.5 tbsp Mayo of your choice
1 tbsp butter divided into 3 pieces
Heat your waffle iron.
Add one of the pieces of butter.
Once melted, divide the tuna mixture into 3 equal helpings.
Place 1 helping in the waffle iron.
Cook until the steam stops, don’t wait for the waffle iron to turn off (it will take about 5 minutes).
Serve this with some tartar sauce (I used Kraft).
Makes 3 cakes.
Total net carbs - 5.6 (includes 1 tbsp of the tartar sauce).
