Smoked Whitefish Hatch Chile Spread

1 1/2 cups flaked smoked fish
8 oz softened cream cheese
2 large roasted Hatch chile (chopped) or  Fresh Chile Pure Green Chile (to taste)
1/3 of a Vidalia onion, finely minced.
1 T dried dill
Juice of 1/2 a lemon
1 tsp garlic powder
1 tsp Fresh Chile Hatch Green Chile Powder
1 tsp black pepper

A good long squirt of sriracha sauce, the vinegar in it helps wake things up. 
You could throw everything in a food processor but I like to keep the fish somewhat intact so I mixed up everything till smooth and then fold in the smoked fish.
It’s best to let this sit in the fridge overnight.
I didn’t put any salt in this because the fish was plenty salty. 
Great on crackers or raw veggies, Pure Green Chile on the side - enjoy
