Romaine Chicken Salad with Fresh Chile Kick!
4 cups rotisserie chicken, diced
1 1/2 teaspoons finely chopped fresh tarragon or fresh dill
2 tablespoons finely chopped parsley
1 cup mayonnaise
2 stalks celery chopped
2 teaspoons strained freshly squeezed lemon juice
2 or 3 teaspoon FCC Dijon Mustard
2 teaspoons kosher salt
1 to 2 teaspoons FCC Hatch Table Seasoning
above is your chicken mixture
1 head romaine lettuce slice should be enough for two people, sprinkle with FCC Hatch Table Seasoning and Himalayan Kosher salt
1/2 cup FCC Pecans, chopped
1/2 cup pistachios
1/2 cup walnuts
1/2 cup dried cranberries
1 fugi apple diced
1 cup Cotija cheese crumbled
1 or 2 on the vine tomato, chopped
1 cup English Cucumber, chopped (skin left on)
2 teaspoons FCC Table Seasoning
2 teaspoons FCC Hatch Spice Blend
Mix chicken, celery, FCC Dijon Mustard, mayo, spices, and chill for a couple of hours.
Clean and slice your romaine lettuce.
Plate the lettuce top with chicken mixture, then tomatoes, cucumber, Mexican scallions, pecans, walnuts, pistachios, apples, cranberries, Cotija cheese crumbles, and drizzle balsamic vinegar and extra virgin olive oil.
Sprinkle with more FCC table Seasoning and FCC hatch Spice Blend.
