Red Chile Beer Battered Cod
1 1/2 lbs cod fillets
1 tsp salt
1/2 tsp black pepper
1 cup flour for dredging
1 cup flour (for the batter)
2 tsp baking powder
3 tsp FCC Hatch Red Chile Powder (med)
1/4 tsp paprika
1 tsp Lawry's seasoned salt
1 1/2 cups beer (I used Modelo Negra, it's a great dark beer, but any beer can work. Plain seltzer water is an excellent non-alcoholic substitute.
Pat cod fillets dry with a paper towel. Season fillets with salt and black pepper, dredge in flour and set aside.
In a large bowl, add the remaining ingredients and mix until smooth (almost the consistency of thick cream).
Dip each fillet into the mixture and shake off any excess back into the bowl. Carefully place in hot oil.
Fry for about 2 to 3 minutes or until they turn golden brown.
Use your favorite method of frying.
I fried mine in sunflower oil in a large pan on high heat.
Everything I love about beer batter fish just got 100 times better.

Goes great with french fries and fried squash.
