Pollo Verde "Gumbo Style"!

I started with marinating boneless chicken thighs and chicken tenders with half a bottle of FCC Posole Seasoning with 1/4 cup of Olive Oil and a package of pre-chopped peppers and onions overnight.

Then added a bottle of Pure Green Chile (mild) in a slow cooker for about 6 hours on Low. Then turned to warm for 2 more hours until the chicken was fall-apart tender.

There are many ways to serve it, but I chose “Gumbo Style” with a scoop of Mexican Red Rice served on top with Flour Tortillas on the side. It is delicious!
