Marinated Beef Skirt Steak
This is an approximate recipe for 8lbs of skirt steak.
8 Hatch Chiles, chopped (4 hot and 4 mild) (click HERE for frozen chile, click HERE for fresh chile)
One heaping tbsp FCC Hatch Spice Blend
1/2 cup FCC Fresh Red Chile
Four chipotle peppers, with some adobo
Two oranges and two limes zest, and juice
1/2 cup olive oil
1/4 cup red wine vinegar
One bulb garlic chopped
1 tsp cumin
1 tbsp Mexican oregano
1/2 cup cilantro chopped
One large tomato diced
1/4 cup soy sauce
Salt and fresh ground pepper
Let marinate overnight. Grill over mesquite if possible, ENJOY!!!
