Fresh Chile Company Mexican Cheese Dip and Corn Tortilla Chips
Cheese Dip:
- Sharp White Cheddar, 4 cups shredded
- 16 oz block Velveeta, cut into cubes
- 1 1/2 cups medium FCC green & red chopped frozen Chile
- 3/4 jar FCC medium Mama's Salsa
- 1 small sweet onion chopped fine
- 6 cloves fresh garlic chopped
- 6 tablespoons of half n half
Corn Tortillas Chips: Cut into triangles spray with avocado oil, then sprinkle with Kosher salt.
One batch is FCC Hatch Green Chile Spice & the other batch is FCC Hatch Spice Blend. Bake in oven 375 until golden brown.
Guacamole is three avocados mashed & then the rest of FCC Mama's mixed in, top with Mexican cheese & sprinkled with FCC Hatch Red Chile Powder.
I opened another jar of FCC Mama's just to enjoy having strips & salsa alone.
