Lobster and Shrimp Stuffed Jalapenos

1.Cut jalapeño almost through and remove the stems and seeds.

2. Mix Fresh Chile Red Chile Roast with cheddar, cream cheese (regular not whipped, works better on the pit), and finely chopped onion.

3. Remove lobster from shell and chop coarsely.
Mix with the cheese mixture and stuff jalapenos.

4. Then wrap with bacon slices.
Use a wire rack and pan to smoke on the pit. (I just add ingredients to taste before adding lobster.)

You can do the cleaned shrimp the same way or put the shrimp whole and stuff around it.

5. Once the bacon starts browning, I flip them for even cooking. 5. Dust bacon with Fresh Chile Hatch Green Chile Spice.
