Keto Meatloaf and Garlic Roast Parm Asparagus

2 recipes here, both keto and very tasty!!

Keto meatloaf:

1 pound 80/20 ground beef
1 cup FCC Mama's Salsa
1/2 yellow onion diced
1 large egg
1/4 tsp baking soda
1/4 cup almond flour
1 tbsp FCC Hatch Spice Blend
1 tsp kosher salt
1/2 tsp black pepper

Mix 3/4 cup salsa and the rest of the ingredients in a bowl.
Place the well-combined meat mixture in a loaf pan.
Bake 400° for 30-45 minutes.
Take out of oven and top with remaining 1/4 cup salsa.
Bake another 15 minutes.

Serves 6. Net carbs 4 grams
Garlic Parmesan Roasted Asparagus:

1 bunch of asparagus with the ends broken off and rinsed
1/2 tsp Salt
1/2 tsp Pepper
1 tsp FCC Hatch Spice Blend
1.5 tsp Garlic powder
1/4 cup Parmesan cheese
1 tbsp Olive oil
1/2 stick butter melted

Line a sheet pan with foil.
Place asparagus in a single layer and drizzle with olive oil.
Roll asparagus in oil to coat.
Add salt, pepper, and 1/2 tsp Hatch Spice Blend to asparagus.
In the microwave, melt 1/2 stick of butter.
Add 1/4 cup Parmesan Cheese (I freshly grated mine), 1/2 tsp Hatch Spice Blend, and garlic powder.
Mix until combined (will be like a paste).
Evenly spread that over the asparagus.
Bake at 400° for 15 minutes.
