Homemade Green Chile Sauce

Homemade green chile sauce for my Huevos Rancheros with a fried egg on top served on my fine china.
Green Chile Sauce
2T oil
1/2 small onion diced
1/4c minced garlic
2T flour
1/4t cumin/pepper
1 1/2c chicken broth
1c Pure Green Chile (XHot)
1/4t oregano
1/2t salt optional

Heat oil in a 1-2qt saucepan over med heat. Add onion and garlic cook over low heat for about 5 minutes to wilt onions. Do not let them brown. Raise heat to med stir in flour, cumin, and pepper. Cook stirring for about 2 minutes. When the onion flour mixture begins to color, remove from heat and add the broth, constantly stirring to avoid lumps. Add the green chile and the rest of the ingredients. Return pan to heat brings to a boil. Cover and simmer over low heat for another 30 minutes. The finished sauce should not be too thick-dilute with more broth if needed.

Heat corn tortillas in hot oil to soften. Place tortillas on a plate, Lauer chile sauce, onions, and shredded cheese. Top with a fried egg. Enjoy.
