Homemade Green Chile Chicken Nuggets with Dijon Mustard

My first time using the Fresh Chile Dijon, and it is fantastic! I also had a side of Brussel sprouts with bacon, parmesan, and dijon. Really tasty!


Chicken nuggets:
Two cans of drained chicken. (Tuna or canned salmon would be tasty as well)
One egg
Parmesan cheese, about 3/4 cup
Two tablespoons of pale ale mustard. FCC Dijon Mustard would be great, but I didn't think my kids could take the heat.
1/2 teaspoons Hatch Spice Blend
Pure Green Chile, about 1/2 cup
Salt, pepper, and garlic powder to taste.
Shape into nuggets.
They were fried in avocado oil and butter, 5 minutes on each side. I've found they are better, more overcooked than under, so they are crunchier.
I'll add green onions, ranch seasoning,  cream cheese, shredded cheddar, bacon bits to the chicken mixture depending on my mood and what is in my kitchen.
