Hatch Chile Chicken Rice Casserole

- 1 Cup minute rice
- 4tbsp butter melted
- 1 can cream mushroom
- 1 can cream of chicken
- Hatch Chile powder
- 1-2 cooked chicken breasts chopped
- 1-2 cups Fresh Chopped Hatch Chile (we prefer the hot)
- 2 packages of Shredded Cheddar cheese

Preheat the oven to 350°F.
Spray the casserole dish with cooking spray.
Melt butter in a casserole dish, add all ingredients, and 1 or 1/2 package of cheese, depending on your liking.
Mix well and add some Hatch Chile Powder.
Layer top with cheese to make a seal.
Sprinkle Cheese with Hatch Chile Powder.
Bake at 350°F for approximately 1 hour or when cheese begins to brown.
Serve after resting for a few minutes. Keep Calm and Hatch On!
