Green Chile Chicken and Rice Soup
1 12oz can chicken breast/roasted/baked (you can always add more)
1/2 cup chopped onion
2-3 sticks celery sliced
3 carrots sliced
1-2 tablespoons minced garlic
1/4-1/2 cup fresh chopped cilantro
1/2 jar FCC Pure Green Chile (or more)
1 qt chicken stock
1 1/2 cups pre-cooked rice. (I use 1/2 cup forbidden black rice, 1/2 cup brown rice. 1 cup rice to 2 cups water, takes about 35-45 mins to cook)
Sautée all veggies, FCC Chile, and garlic in oil of your choosing. (I use cilantro roasted garlic-infused olive oil from the Olive Basket)
Add chicken, mix well, and heat up to incorporate flavors.
Add chicken stock, bring to a low rolling boil, reduce heat and simmer till carrots are tender. Add rice, simmer a few minutes on low, salt and pepper however you like it! Voila! Super quick and easy!
