Green Chile Machete Chicken

Hatch Green Chile Machete Chicken


1 sweet onion , diced
1 tbsp olive oil
4 cloves garlic , finely minced
4 (14.5 oz) cans chicken broth
4 Fresh Chile fire roasted diced green chiles {save 1/2 cup to put on top of your bowl of chile}
2 tsp cumin
1 tsp paprika
1 tsp dried oregano
1 tsp ground coriander
2 tbsp Fresh Chile Hatch Green Chile Powder
kosher salt to taste
1 1/2 tbsp Fresh Chile Hatch Table Seasoning
1 1/4 cup frozen or fresh roasted corn
3 (15 oz) cans cannellini beans or great northern beans
4 cups shredded cooked (rotisserie or left-over chicken)


Sauté your chicken in 2 tsp of olive oil until a little crispy, about 5 minutes.
2 (8 oz) pkg Neufchatel cheese (aka light cream cheese), cut into small cubes.
1 Tbsp fresh lime juice
2 Tbsp chopped fresh cilantro, plus more for serving Tortilla chips or strips, monterey jack cheese, sliced avocado for serving {optional}.
Heat olive oil in a large pot over medium-high heat.
Add onion and sauté for 4 minutes.
Add garlic and sauté 3 minutes longer.
Add chicken broth, green chiles, cumin, paprika, oregano, coriander, Fresh Chile Hatch Table Seasoning, Fresh Chile Hatch Green Chile Powder, and salt.
Bring mixture to a boil then reduce heat to medium-low and simmer for 15 minutes.
Drain and rinse beans in a fine mesh strainer or colander then measure out 1 1/2 cups.
Set whole beans aside, transfer 1 1/2 cups beans to a food processor along with 1/4 cup broth from soup, puree until nearly smooth.
Add Neufchatel cheese to soup along with corn, whole beans, and pureed beans; stir well.
Simmer 5 - 10 minutes longer.
Stir in chicken, fresh lime juice and cilantro.
Plate your dinner in a nice bowl or even a sourdough bread bowl and serve with your choice of all or some of the following, I drizzled my avocado sauce {you can find my sauce on my 8/10 post} and some cacique crema salvadorena a mexican sour cream over our bowl of chile, or 1 tbsp fresh lime juice, sliced avocado for serving monterey jack cheese and Fresh Chile Machete diced hatch green chiles.
