Fresh Chile Steak & Cauliflower

Grilled T-bone with my homemade steak rub, mushrooms sautéed in butter seasoned with salt and pepper, and a cauliflower steak

Cauliflower steak recipe:

1 medium head of cauliflower cut in 1/2.
Then cut the 1/2 in 1/2 again.
You’ll have two steaks (you can save the rest of the florets for another day). 
Mix together
1/4 cup extra virgin olive oil
2 tbsp grated Parmesan cheese
1/2 tsp onion powder
1/2 tsp garlic powder
1/4 tsp smoked paprika
1/4 tsp Fresh Chile Hatch Red Chile Powder
Salt and pepper

Brush the mixture on both sides of the cauliflower.
Place on a parchment-lined baking sheet and bake at 400° for 10 minutes, then flip and bake another 10 minutes.
Top with 1/4 cup mozzarella cheese for each steak. Place in oven until cheese is melted

Steak rub

Mix together
1 1/2 tsp garlic salt
1 1/2 tsp black pepper
1 tsp dry mustard powder
1 tsp onion powder
1 tsp cumin
1/2 tsp thyme or sage
1/4 tsp chipotle chile powder
1/4 tsp Fresh Chile Hatch Red Chile Powder
1 tsp smoked paprika

Rub liberally on steak, chicken, or pork. 
Cook to desired "doneness". Enjoy!!
