Deconstructed Chile Rellenos

Layer 6-8 Roasted Hatch Chile in a buttered loaf pan with 3 cups of shredded chihuahua cheese.
Top with 2 eggs, separated (whites beaten to stiff peaks).
Add 1/4 tsp of baking powder, 1/2 tsp salt, and 1tsp flour to the yolks (from above eggs), then fold in the whites. 
Bake @ 375°F until golden brown. 

Serve on top of pinto beans seasoned with onion, garlic, Mexican oregano, cumin, pepper and chile powder. 

Mexican Alla Vodka Sauce

Sauté onion and garlic in olive oil.
Deglaze with tequila and reduce, add puree, water, honey, cumin, chile powder, and oregano. 
Simmer for 30 min, adding Mexican crema.
