Chipotle Chicken Smothered Burrito
In a blender, combine:
1, 15oz container of Mexican crema
1 Tbsp chicken bouillon
2-3 garlic cloves
1/2 tsp Posole seasoning
1/2 tsp cumin
4 chipotle peppers in adobo sauce
1 Tbsp of the adobo sauce
1 cup Oaxaca cheese, shredded
Blend and adjust seasonings to taste.
5 flour tortillas
Additional shredded cheddar and Oaxaca cheese.
Heat large skillet w/ oil and sauté 1 small diced onion. Add chicken to skillet and warm through—warm tortillas and spread beans and chicken onto the tortilla. Roll up.
Place a small amount of chipotle sauce on the bottom of a baking pan. Place rolled burritos in the pan. Top with remaining sauce and cheese. Bake at 350 for 20 / 25 minutes. Top with cilantro. Enjoy.
