I couldn’t leave out the FCC Hatch Spice Blend. So good!
I don’t use a recipe (!) but here are some general instructions:
1 lb. ground beef (I used 90% lean ground sirloin)
1 large potato, diced
1 small potato, diced
1 small or medium onion (to your taste)
Lots of minced garlic! (my taste!)
FCC pure green chile, 1/2 jar
I added about 4-5 frozen roasted chiles, well-chopped (that’s about how many I put in my baggies)
FCC Hatch Spice Blend (can get salty, so go light; you can add some later as it’s cooking)
Spray your skillet lightly if it’s lean beef. Break it up, brown it. Add salt, pepper, the Hatch Spice Blend, and the large diced potatoes. Toss around to blend. Cover w/ the broth and bring to a gentle boil. Bring heat to low and cover. Boil the small diced potatoes in some of the broth separately. When potatoes are soft, mash them well in the broth you boiled them in (you can put them in the blender if you like). Mix well into the chile Verde and continue to cook
