Chicken Chile Verde

- 2 1/2 - 3lbs Rotisserie Chicken (Costco has it already pulled) cut into about 1 inch chunks.
- 2 cups Chicken Broth
- 2 Tbs minced garlic
- 1 LG onion sliced thin or diced.
- 2 jars Fresh Chile Pure Green Chile, (Use desired heat level).
- 1/2 jar Posole Seasoning.
- 4 potatoes cubed. (Optional).
- 2 Tbs EVOO
- Flour Tortillas
I use my pressure cooker/ Instapot but you can do it in a stew pot or slow cooker as well.
Heat the pot and add the onions and garlic, once softened, add the broth, Pure Green Chile, Posole Seasoning and chicken, set for 60 minutes on the Meat/Stew, and cook for an hour.
Stir well and add the potatoes (if used), close it back up and cook for another 10 minutes. ENJOY!!!!!

(In a STEW pot, use a little more broth, again, add the onions and garlic first, when soft, add all the other goodies and bring to a boil, reduce the heat to low, cover and simmer for a few hours stirring occasionally. Let it snuggle until you just can't stand that wonderful smell any longer then add the potatoes for at least 30 to 40 minutes.
If you chose NOT to use potatoes, this stuff is great over rice as well or just as a stew.)
