Better Than The Rest Breakfast Sandwiches

I made some freezer breakfast biscuits for me and my daughter Katelyn next week. We are both guilty of going to get fast food sandwiches for breakfast. Well, this is a cheaper alternative. I know it tastes much better.  I made six sandwiches with the Canadian bacon and the other 10 with the sausage strips.
Better than the other breakfast sandwiches!

Ingredients:
One pkg Canadian bacon
One pkg smoked sausage strips
Two cans of jumbo buttermilk canned biscuits
16 slices pepper Jack cheese cut in 1/2
12 eggs
1/2 pkg Mexican cheese blend
1/4 cup FCC Red & Green Blend
FCC Hatch Spice Blend to taste
Salt and pepper to taste
1/2 bunch scallions
1/4 cup half and half

Instructions:
I preheated my oven to 350° per instructions on the canned biscuits. I baked mine for 17 minutes.  Set aside and cool. Then cut in 1/2 with a serrated knife.
While the biscuits are baking, fry the sausage strips and Canadian bacon to desired crispness in a skillet and drain on paper towels. 
I used a deep baking sheet and sprayed it with olive oil cooking spray. I whisked together the 12 eggs, Mexican cheese, and half and half with the seasonings, chiles, and scallions. I used pink salt and freshly cracked multi-colored peppercorns. Bake 350° for 20 minutes, cool, and cut into 16 squares.
Assemble your sandwiches with bottom biscuit, 1/2 slice of pepper Jack, meat, egg, 1/2 slice pepper Jack, and top of the biscuit. Wrap in plastic wrap and place in gallon-sized freezer bags (this recipe used three freezer bags).
To reheat, unwrap and place in the microwave covered in a damp paper towel for 90 seconds, flip and microwave another 90 seconds.
