Beef Chile Colorado
3 lbs of Boneless Chuck Roast, Cubed
1 Jar of Sun-Dried Chile (any heat level you desire)
1 Jar of Fresh Red Chile (any heat)
3 tablespoons of Sea Salt
5 cloves of freshly minced garlic
2 medium Yellow Onions, chopped
4 medium Russet Potatoes, quartered
3 tablespoons of Corn Starch
For this recipe, I used my Insta-Pot (a 6-quart pot). Put all your ingredients into the Pot and mix it with a large spoon. Put your Pot into the Insta-Pot and set it to "Pressure Cook" for one hour. When ready, release pressure...mix one cup of cold water with 3 tablespoons of corn starch (mix well).
While stirring the Beef Chile Colorado, pour in the corn starch very slowly..this will thicken the Chile; add more Sea salt if needed. So delicious, enjoy!!
