3/4 cup Panko breadcrumbs
1 tsp coriander
1 tsp FCC Hatch Green Chile Spice
1/2 c flour
2 large ripe but firm avocados
EVOO to drizzle
Preheat your oven to 425° & line a baking sheet with parchment paper.
In 1 bowl, mix panko and seasonings.
In a 2nd bowl, put in the flour.
In a 3rd bowl, add your 2 eggs (beaten).
Cut the avocados lengthwise into 8 slices each and peel.
Then dredge each slice through the 3 bowls - flour, egg, then panko.
Place onto a baking sheet and drizzle with EVOO.
Bake for 10-14 minutes.
I took some Fresh Chile BBQ Sauce and mixed it with Duke's mayo as a dipping sauce.
