2 for 1 Red Chile Honey Wings and Grilled Green Chile Corn Casserole

1. Wings

Wings seasoning:

1 teaspoon FCC Hatch Red Chile Powder
1 teaspoon FCC Hatch Green Chile Powder
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon salt
1 teaspoon black pepper

Wing sauce:

1/2 jar of Red Chile Roast (hot)
1/3 cup honey
4 tablespoons of butter

Coat wings with seasoning place on the grill directly (away from the fire). While the wings are cooking, make the wing sauce, put it in a saucepan over low heat, or do as I did and place it on the grill next to the wings. Allow butter and honey to dissolve. When the wings are done, dip into wing sauce or-baste with wing sauce and place back on the grill to allow the sauce to set.

Green Chile Blue Cheese dip:

Add 4.5 ounces of blue cheese crumbles with two heaping tablespoons of mayonnaise, two heaping tablespoons of sour cream, 4 tablespoons of Pure Green Chile, a pinch of salt, and a pinch of pepper mixed up with a spoon. Place in the refrigerator to allow to cool and thicken up. (This stuff is incredible and would also be great on top of a steak, as blue cheese lovers do)

2. Corn Casserole:

Grill five ears of corn still in the husk, remove from grill, cut corn off the cob, mix the corn with two heaping tablespoons of mayonnaise, four heaping tablespoons of Pure Green Chile, One jalapeño diced fine (or Jalapeño Roast), a teaspoon of salt, a teaspoon of black pepper, and top with diced chives.
